Gluten Free Waffles

Breakfast is a huge event in our house, but the weekday mornings are so busy that it is nice on the weekends when we can get a chance to whip up a batch of these gluten free waffles that the whole family can enjoy.

They are super easy and no one will ever no that they are gluten free so you can serve them up to the whole family.

Ingredients

  • 2 cups gluten free flour
  • 1/4 cup sugar
  • 3 tsp baking powder
  • 1/4 tsp sea salt
  • 2 large eggs, whites separated
  • 1 cup buttermilk (I make my own by adding 1 drop of Lemon essential oil to organic milk)
  • 1/2 cup organic milk
  • 3/4 cup melted coconut oil
  • 1 tsp pure vanilla

Directions

  • Preheat waffle iron.
  • Mix dry ingredients; flour, sugar, baking powder and sea salt, together in a big mixing bowl.
  • Beat egg whites in a separate bowl until peaks form.
  • Place all wet ingredients; egg yolks, buttermilk, milk, vanilla, and melted coconut oil, together in a bowl and whisk until combined.  Coconut oil will most likely clump and hardened so place bowl in microwave for 30 sec.  (it is okay if there are still some lumps)
  • Add the wet ingredients to the dry ingredients and once combined fold in whipped egg whites.
  • Spoon 1/2 cup of mixture into the centre of waffle iron, close waffle iron lid and cook until golden brown about 2-3 minutes, depending on your waffle iron.  Remove when done and place on cooling rack till ready to enjoy.

Serve with fresh fruit 🙂
