This recipe is a great substitute for people who have cut grains out of their diet or just want a healthier alternative for crackers made from processed ingredients. They are easy to make and the recipe is extremely flexible to suit personal tastes.
Soaking the seeds overnight, prior to making these crackers will help to reduce anti-nutrients like phytic acid, lectins, and saponins. Simply rinse then soak the seeds the night before you are planning on making these crackers, then rinse again before preparing the recipe. Mix them still wet and just increase the cooking time.
You can omit any seeds you do not have or substitute in any others. The same goes for spices. Have fun with this recipe and customize it to suit your needs and tastes.
Grain Free, Nut Free Crackers
Ingredients
- 3 pastured eggs
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup sesame seeds
- 1/4 cup hemp seeds
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 1 teaspoon Himalayan or sea salt
- 1-2 cloves of garlic, minced fine
- 1 tablespoon mixed dried Italian spices
- 1 tablespoon turmeric
- Optional: 1 tsp cayenne powder
Instructions:
Combine eggs, seeds, spices, and salt in a bowl. Stir well.
Use a spatula to transfer the mixture onto a cookie sheet lined with a silicone mat or parchment paper.
Spread the mixture evenly across the cookie sheet.
Bake at 200 for about 30 minutes if the seeds are dry, or about 1 hour if the seeds were soaked. The longer you leave these in the oven the crunchier they will be. Again, this is personal preference. Cut or break into pieces. They should be crunchy. If they do not break with a snap, put them in the oven on warm until they are completely dry.
