Healthful Beet Bortch

Ingredients

  • 8 cups vegetable broth
  • 4 beets, medium shredded
  • 1 carrot, large shredded
  • 2 potatoes, medium shredded
  • ½ head of red cabbage, shredded
  • 1 onion, diced
  • 5 garlic cloves
  • 1 tbsp dill
  • 2 bay leaves
  • 1 tbsp dry parsley
  • 5 tbsp tomato paste
  • 1 tbsp sugar
  • 2 tbsp apple cider vinegar

Directions 

  • Shredding all your vegetables gives them a quicker and equal cooking time. Add the first 5 ingredients to a large pot and boil for 15 minutes.
  • Add the remaining ingredients and cook over medium heat for 30 mins.
  • Add salt and pepper to taste and enjoy!

The benefits of beets include:

  • 100g of beet is said to contain 11% of your daily fiber, 3% protein and 27% folate.
  • Folate helps with the development of  a fetus’ spinal column.
  • Great source of Vitamin C and can improve immune function; including preventing asthma symptoms.
  • Contains beta-carotene, a form of Vitamin A, which an antioxidant that helps prevent free radicals.
  • PRO TIP: add ground flaxseed for additional fiber!
