Hummus Recipe

Hummus is one of those foods that has always been a go to for me. It’s packed with quality protein and tastes amazing on just about anything!

Give this delicious hummus recipe a try:

Ingredients:

  • 1 cup dry chickpeas
  • 1/4 cup Apple Cider Vinegar
  • 2 cups cold water
  • 1/4 cup tahini
  • 2 TBS fresh lemon juice
  • 1 tsp cumin
  • 1-2 cloves garlic
  • 1 TBS olive oil
  • salt and pepper to taste

Instructions:

  • Soak dry chickpeas in water and vinegar over night (in a pinch use canned beans)
  • Drain beans and cook until fork tender (1-1.5 hours)
  • Roast garlic in a 400 degree oven for 5-6 minutes
  • Rinse beans under cool water and place in a food processor
  • Place oil, salt, pepper, garlic, and cumin in a blender and blend until smooth
  • Add tahini, lemon juice, and oil mixture to chickpeas and blend.
  • Add cold water if needed to loosen mixture

I use this recipe as a base and depending on what I have on hand I will often add roasted beets,kale, avocado, chilis.. the possibilities are endless so add what you love and make it your own!
