Quinoa is one of my favourite staples to use in making a broth bowl. Its gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
Quinoa Broth Bowl
Recipe
- 1-2 tbsp oil in pot
 - 2 red bell peppers diced
 - Handful of Julian carrots
 - Sauté till soft
 
Add the following:
- 3-4 handfuls of Kale
 - 6 cups of vegetable broth
 - 4 cups of water
 - Bring to a boil
 - 3/4 cup of quinoa
 - 1 1/2 cups of red lentils
 - Juice of 1 lemon
 - Then toss lemon in pot while boiling .
 - Remove off stove after quinoa is cooked and Lentil is soft .
 - Discard lemon
 - Add 2 tbsp of Sriracha
 - 2 tsp chopped basil
 - Pink Himalayas salt to taste
 - Simmer and serve with lemon slice on the side
