Indulge In Any Season….. Quinoa Broth Bowl

Quinoa is one of my favourite staples to use in making a broth bowl. Its gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

Quinoa Broth Bowl

Recipe

  • 1-2 tbsp oil in pot
  • 2 red bell peppers diced
  • Handful of Julian carrots
  • Sauté till soft

Add the following:

  • 3-4 handfuls of Kale
  • 6 cups of vegetable broth
  • 4 cups of water
  • Bring to a boil
  • 3/4 cup of quinoa
  • 1 1/2 cups of red lentils
  • Juice of 1 lemon
  • Then toss lemon in pot while boiling .
  • Remove off stove after quinoa is cooked and Lentil is soft .
  • Discard lemon
  • Add 2 tbsp of Sriracha
  • 2 tsp chopped basil
  • Pink Himalayas salt to taste
  • Simmer and serve with lemon slice on the side
