What really makes a delicious salad? Of course the contents of the salad are important, but I find the dressing is what makes or breaks my enjoyment of a salad. I still remember early in my health-focused journey, when I would get a Caesar or ranch-based salad when going out for meals with friends at a not-so-healthy restaurant. I always thought a salad was a salad and didn’t pay much attention to the dressing.
Now, I really enjoy a refreshing vinaigrette. They are so versatile! I grew up in an Italian household where salad dressing was comprised of olive oil, some sort of vinegar (often balsamic) and salt. Now I like to experiment with adding berries and all sorts of things to my salad dressing concoctions. Here is a recipe for my staple – a super simple lemon vinaigrette.
Lemon Vinaigrette
Recipe
- ¼ cup avocado oil
- ¼ cup apple cider vinegar
- 3 tbsp fresh lemon juice
- Zest of 1 whole organic lemon (This is an important step! When I skip the zest it’s not the same)
- 1 tbsp maple syrup (more or less to taste)
Directions
- I add all contents to my Vita-Mix and blend briefly but you could use any method of preparing salad dressing (blender, small food processor, or one of those shaker cups, just give it a good shake).
