Mammas’ all over the world have been feeding their little ones bananas since time began, from gorillas in the mist to the modern kitchen table, bananas are loved.
My mamma has been baking fresh banana bread ever since I can remember and she has continually tweaked her recipes to feed her strong passion for wholesome nutrition.
Her recipe begins with freshly ground whole spelt, that she does in her pantry, and from then on the ingredients come together in a magical way that always results in an incredibly delicious, melt in your mouth banana bread. Like momma says, “the proof is in the pudding!”…
Mamma’s Banana Bread
Sift together
- 2-1/4 cup whole grain flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp nutmeg or 1 tsp fennel
- 1/2 cup walnuts
- 1/4 cup sunflower seeds
- 3 dates chopped
Mix together
- 2 eggs whipped till thick
- 1/2 cup olive oil
- 1 tsp vanilla
- 4 mashed bananas
Directions
- Add wet to dry and stir on a low beater setting till all is mixed
- Sprinkle top with shredded coconut and sunflower seeds
- Pour into a coconut oiled loaf pan
- Bake @325 for 15 minutes and then turn down to 300 for 45 minutes
