Try This Refreshing and Yummy Smoothie!
I haven’t made this smoothie in a while, but had an itch for it this morning. It was so refreshing and delightful I thought I would share it with you all. Another vegan and gluten free smoothie, this tastes like mint chocolate chip ice cream without all the guilt and ill effects to our health. It’s not too sweet (depending on your choice of protein powder) so it’s perfect as a refreshing breakfast smoothie.
Recipe
- 1.5 cups unsweetened almond milk
- 1 scoop vegan protein powder
- ½ frozen banana
- ¼ tsp pure peppermint extract
- handful of organic baby spinach or other greens
- small handful of cacao nibs
Add all ingredients into blender and blend until smooth. When it’s at a consistency you like (feel free to add some ice cubes if you are using a fresh banana or just want it a bit thicker), throw in your cacao nibs and blend on a low speed. You can add the cacao nibs at the beginning if you like; I enjoy adding them at the end, on low speed so that you get a bit of a crunch in the smoothie.
