5-minute recipe, no baking required, grab and go healthy snack that kills any sweet tooth!
No-Bake Peanut Butter Bites
Ingredients
- 1 cup of natural peanut butter
- 1 cup of gluten-free rolled oats
- 3/4 cup of unsweetened coconut
- 1/3 cup of pure maple syrup
Optional: 1/4 cup of vegan chocolate chips OR 1/4 cup of goji berries
Instructions
- Combine the peanut butter and maple syrup into a pot and heat up until soft (Approx. 2-3 mins on low)
- Combine the oats, coconut and any optional ingredients you choose into a bowl and mix thoroughly into a dry blend
- Add the slightly heated peanut butter and maple syrup to the dry ingredients and mix until it forms a batter-like substance
- Roll into small balls, about the size of a teaspoon – this should make around 20-25 bites
- Lay out on a pan and store in the fridge for one hour
- Enjoy!
