Oatmeal Chia Breakfast Pudding

Here is a pudding that is healthy enough to eat for breakfast. If you eat it with a smoothie, you will have no problem getting to lunch without snacking, enjoy!

Oatmeal Chia Breakfast Pudding

Ingredients 

  • 1 cup unsweetened coconut milk
  • 1/2 cup quick oats
  • 3 tbsp chia seeds
  • 1 tsp cinnamon
  • 2 tbsp maple syrup
  • 1/2 chopped apple, organic
  • 1/2 cup raisins, organic

Directions 

  • Place coconut milk, quick oats, chia seeds, maple syrup and cinnamon in a mason jar and soak overnight in the refrigerator
  • In the morning stir well and place in a bowl
  • You could also keep it in the mason jar, if you’re in a hurry
  • Mix in apples and raisins and other fruit if you want
