On The Go Breakfast

Today I would like to share with you one of my favorite on the go breakfast recipes:

Healthy Oatmeal Cookies

They are quick and easy to make. You can even make a bunch before hand and freeze them so you can grab and go.

I have altered this recipe from an existing less healthy version that I found online.

Ingredients

  • 1 cup of rolled oats
  • 1 cup of quick oats
  • 1 cup of cranberries
  • 1 cup of pumpkin seeds
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • mix all together  then in a separate bowl
  • 2 bananas mashed
  • 2 tablespoons of coconut oil
  • 2 eggs whisked
  • 1/3 cup of honey organic preferable

Instructions 

  • mix together then combine both bowls
  • take 1/2 cup measure fill to top and reverse onto cookie sheet press down lightly with spoon

bake at 350 degrees for 20 mins.

I promise you will love these delicious on the go cookies for breakfast or as a mid-day snack!
