After eliminating refined sugar from our diet, my wife was extremely disappointed that she could no longer enjoy her favorite dessert- pecan pie.
Being the caring husband I am, I started an exhaustive search to find a healthy pecan pie recipe that not only had healthy ingredients but also tasted like the pecan pie of the past.
When I couldn’t’ find one that I was really satisfied with I decided to play a little Dr. Frankenstein and blend the best ingredients from different recipes.
Here is my dairy free, grain free, refined sugar free pecan pie masterpiece…
Pecan Pie Without One Main Ingredient – Guilt
Ingredients
Crust
- 1 cup almond flour (substitute: 1 cup of almonds or pecans finely ground in a blender until flour like).
- 3 tablespoons coconut oil plus some to grease the pie pan.
- 1 egg.
- ¼ – ½ teaspoon Cinnamon powder to taste.
Instructions
- Preheat oven to 325 degrees.
- Grease the pan with the coconut oil.
- Mix ingredients by hand.
- Press crust into the bottom and sides of the pie pan.
- Bake until barely brown (approx. 8-10 mins).
- Remove crust and let stand while preparing the pie filling.
Ingredients
Pie Filling
- ½ cup honey.
- ½ cup maple syrup.
- 3 eggs.
- 1/3 cup coconut oil.
- 1 teaspoon vanilla.
- 1 ¼ cups crushed pecans.
Instructions
- Whisk together the first five ingredients until the eggs are beaten and everything is well mixed.
- Add pecans and stir.
- Pour mixture onto the crust.
- Bake in a 325 degree oven for around 70 minutes or until the middle of the pie no longer jiggles
So why do I say this Pecan Pie has no added guilt? Well it has:
- Almonds, which contain monounsaturated fatty acids, dietary fiber, antioxidants, vitamins like riboflavin, and trace minerals such as magnesium.
- Coconut oil, which contains Caprylic acid which has antibacterial, antiviral, antifungal and anti-inflammatory properties. It also contains Lauric acid which has been shown to help treat or prevent infections, viruses, digestive disorders and chronic diseases.
- Honey, which is not only tasty but also contains flavonoids and antioxidants that help reduce the risk of some cancers and heart disease.
- Cinnamon, which has antioxidant, anti-inflammatory, anti-diabetic, anti-microbial, immunity-boosting, cancer and heart disease-protecting abilities.
So enjoy all the pecan goodness without the added guilt!
