Acai berry is a delicious dark purple berry that grows in the rainforests of South America. This nutrient dense fruit has been used in ancient civilizations as part of their daily diets and medicinal practices. They contain powerful antioxidant flavonoids such as anthocyanin – more powerful than those found in blueberries and cranberries, fiber, healthy fats, trace minerals and are also low in sugar. There have also been some studies showing they can lower bad cholesterol (LDL), boost brain function and can reduce the risk of cancer. Not to mention they have a delicious flavour!
Acai berries have a short shelf life and are most popularly consumed frozen or in powder. The frozen kind can be found in some health food stores, but I recently discovered that Bulk Barn carries the Acai powder. It is by Simply Organic and it is a freeze dried powder with no fillers, flavours, added sweeteners or maltodextrin. You can add this powder to any of your favourite juices, drinks or smoothies. But below I will show you how to make a delicious superfood Acai breakfast bowl.
Acai Breakfast Bowls
Ingredients
Paste
- 2-3 scoops of Simply Organic Acai Berry Powder
- 1 frozen banana
- 1/2 cup of frozen berries
- 1/2 cup of coconut milk or your favourite type of milk (you can add more depending on how smooth or think you want your paste)
- 1 tsp. of maple syrup
- 2 tbsp of water
Toppings
- 1 tbsp of natural peanut butter or any nut butter
- 2 tbsp of organic dried coconut flakes
- 1 tsp of chia seeds
- 1 tsp of flax seeds
- 1 tsp of hemp seeds
- 3/4 cup of any of your favourite berries (blueberries, raspberries, blackberries etc.)
- Half a banana
- Maple syrup to taste
- 1 tsp of your favourite seeds – I used pumpkin
Directions
- Blend all your paste ingredients until smooth
- Consistency should be thick and paste like
- Add more water or coconut milk if you would like it thinner
- Add the paste to a bowl and top with all your toppings!
