For some reason most pesto manufacturers think cheese is a necessary ingredient in pesto, pfffffft, what do they know? Vegan pesto is the best.
Pesto has long been listed as one of my favourite foods, if I only had vegan pesto and hummus and some things to dip in them I would be happy. It’s super easy to make and goes with EVERYTHING, I enjoy pesto in dragon bowls, on veggie burgers, in sandwiches, with vegetables – cooked or not, with pasta, stirred in to brown rice, on toast under a mashed avocado, you name it, I’ll eat it with pesto.
Probably my favourite thing about pesto is how customizable it is. The pesto in these pictures is made with cilantro and sunflower seeds! So this recipe is more like an un-recipe, you’ll see.
Recipe: Vegan Pesto
Ingredients
- 1 cup of your desired herb (basil / parsley / cilantro)
- 1/2-1 cup something green (spinach / kale / chard)
- ¼ cup of fat (avocado or pine nuts / walnuts / cashews / hemp seeds / pumpkin seeds / sunflower seeds)
- 1-2 tbsp olive oil
- 1-2 garlic cloves
- 0.5 tbsp lemon juice
- salt & pepper to taste
Method
- Throw it all in a food processor and enjoy.
- Optional: Throw in some nutritional yeast if you miss that cheesy tang.
