Retro Recipe Revisited – Banana Muffins

This is another one of my Grandma’s recipes. She was making trans fat free muffins before we even knew what trans fats were!! This recipe is now low sugar and gluten free as well.

Banana Muffins

Mix

  • 3-4 ripe bananas – mashed
  • 1/2 cup canola or olive oil
  • 1/4 cup organic raw sugar cane sugar
  • 1 egg
  • 1 tsp vanilla
  • Mix dry ingredients:
  • 1 1/2 cups GF flour mix (see below)
  • 1 tsp nutmeg
  • 1 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Add to wet ingredients along with:
  • 1 tsp baking soda dissolved in hot water (1-2 tbsp)

Directions

  • Mix until just combined and spoon into paper lined muffin tin
  • Bake at 375 degrees for about 30 minutes – tooth pick will come out clean when they are done!!

My GF flour mix is 2 parts brown rice flour, 1 part arrowroot powder and 1 part GF flour/powder of your choice. I like almond or quinoa as they add protein.
