Sweet potatoes are not only delicious, but their Vitamin A is through the roof, making them excellent for vision and brain function. They’re also a fantastic beauty food thanks to Vitamin A’s role in healthy skin.
Simple Meal Idea: Loaded Sweet Potatoes
Simple Sauce Recipe
Ingredients
- 1 cup coconut milk
- 2 tsp curry paste, any (I like yellow or red)
- 1/2 tsp few drops of lime juice
- Pinch of sea salt
- Pinch of coconut sugar
Method
- Whisk ingredients together
- Refrigerate to thicken
Roasted Chickpeas
Ingredients
- 1.5 cup chickpeas
- 1 tbsp oil
- Sprinkling of spices (I like paprika & curry powder)
Method
- Preheat oven to 400
- Shake ingredients together in a closed container
- Spread on baking sheet
- Roast for 30-45 minutes, turning once, until desired crunch achieved
Sweet Potatoes
- Halve and bake sweet potatoes at 400 until cooked through
Then throw it all together and top with whatever you like. Pictured is chopped cilantro and organic sriracha.
