This dish offers the ease and convenience of a one-dish meal and gives you the opportunity to incorporate a variety of vegetables into one meal.
Spaghetti Squash Casserole
Ingredients
- 1 large spaghetti squash
- 1 tbsp virgin coconut oil
- 1 lb meat of your choice
- 1/2 lb mushrooms, sliced
- 1 large onion, chopped
- 3-4 cloves of garlic, chopped
- 2 cups of kale, cut or torn into bite-sized pieces
- 1/2 lb grape or cherry tomatoes, cut in half
- 1/2 cup soft unripened goat cheese
- Salt & pepper to taste
Directions
- Preheat the oven to 350° F
- Cook the spaghetti squash in the oven or Instant Pot, just enough so that the flesh pulls away easily from skin, but is not mushy
- Heat the oil in a frying pan, and sautée the meat, onions and mushrooms, until the meat is cooked and the onions and mushrooms are soft
- Mix the flesh from the squash, the meat, onions and mushrooms, and the remaining ingredients in a large casserole dish
- Bake in the oven for 20-30 minutes or until everything is warm through
