Spaghetti Squash Casserole

This dish offers the ease and convenience of a one-dish meal and gives you the opportunity to incorporate a variety of vegetables into one meal.

Spaghetti Squash Casserole

Ingredients

  • 1 large spaghetti squash
  • 1 tbsp virgin coconut oil
  • 1 lb meat of your choice
  • 1/2 lb mushrooms, sliced
  • 1 large onion, chopped
  • 3-4 cloves of garlic, chopped
  • 2 cups of kale, cut or torn into bite-sized pieces
  • 1/2 lb grape or cherry tomatoes, cut in half
  • 1/2 cup soft unripened goat cheese
  • Salt & pepper to taste

Directions

  • Preheat the oven to 350° F
  • Cook the spaghetti squash in the oven or Instant Pot, just enough so that the flesh pulls away easily from skin, but is not mushy
  • Heat the oil in a frying pan, and sautée the meat, onions and mushrooms, until the meat is cooked and the onions and mushrooms are soft
  • Mix the flesh from the squash, the meat, onions and mushrooms, and the remaining ingredients in a large casserole dish
  • Bake in the oven for 20-30 minutes or until everything is warm through
