The days are getting longer, the sun is shining bright which only means one thing…the summer months are just around the corner.
This makes me beyond excited for so many reasons; barbecues with friends, bike rides with the kids, beach days, cabin life, outdoor sports and late nights having a cocktail by the fire, just to name a few.
But, what I get most excited about is the summer time menu of salads, salads and more salads.
Here is my all time favourite, easy, go to salad that the whole family loves. Simple ingredients with a powerful antioxidant punch, vitamins and minerals from the leafy greens, healthy fats from the avocado and almonds, and a protein of your choice. This salad has everything you need!
Spinach, Kale, Triple Berry and Avocado Salad
Ingredients
- 1 cup Baby Spinach
- 1 cup Baby Kale
- 1/4 cup Blueberries
- 1/4 cup chopped Strawberries
- 1/4 cup Raspberries
- 1 sliced Avocado
- 1/4 cup Sliced Almonds
- Protein of your choice: Hard boiled eggs, chicken, steak, black beans, chickpeas
Cut up all the ingredients and serve with your favourite berry vinegarette or poppyseed dressing.
