This morning I was trying to make pancakes for my kids but the pancakes all burned and did not come out right. I added too much milk I guess and that’s why the pancakes did not hold and were spreading all over the pan. I had a lot of batter left and decided to make a pudding instead of the pancakes. This pudding came out so delicious that the kids were asking for a second helping. I’m sharing this recipe with you so you can too treat your children and yourself to an amazingly creamy, flavourful and very yummy breakfast meal.
Strawberry Banana Pudding
Ingredients
- 4 ripe bananas
- 1 cup oat flour (or steel cut oats)
- 1 cup coconut milk
- 1 t vanilla extract (no alcohol)
- For pudding layers:
- Homemade granola
- Fresh strawberries (cut into small pieces)
Directions
- Pulse bananas in a food processor
- Add oat flour and mix all well
- Then pour the milk and vanilla extract
- Take a glass jar or bowl, and arrange the pudding in layers
- First, homemade granola, followed by the strawberry banana pudding, and topped with cut strawberries
- Repeat the layers
- Place the pudding in the fridge for 1 hour to settle and to get soaked well
- You can make it the night before and enjoy for breakfast
