Twice Baked Spaghetti Squash

When I went home for the holidays my mom made the most amazing dish and I had to share it, Twice Baked Spaghetti Squash!

Super easy to make, it’s both delicious and filling! Thanks for the recipe Mom!

Twice Baked Spaghetti Squash

Ingredients

  • 1 Spaghetti Squash
  • 1 Small Red Onion
  • 1 Yellow Pepper
  • 2 Cloves of Garlic
  • 1 Package Extra Firm Tofu
  • 2 Cups Cheese (of your choice, I love feta, but my mom used cheddar)
  • Tomato (optional)

Directions

  • Preheat your oven to 350. Cut the squash in half and remove the seeds. Put a little bit of water in the bottom of your pan and put in the halves cut side down, bake for a half-hour
  • While the squash is baking, chop and mix in a bowl, your onion, pepper, garlic, and tofu
  • When the squash is ready, take it out of the oven and with a fork, start scraping out the inside of the squash and adding it to your bowl. Mix everything together and put back in the hollowed squash skins. Top with your choice of cheese and bake until the tops are brown
  • This is an awesome option for anyone who doesn’t know what to make as a main for their vegetarian guests (remove the cheese and it becomes a vegan dish)
