This is not your typical paella dish but tastes just as good or even better. This dish consists of only vegetables, so it is one I would call a “good for your meal”
Vegan Paella
Ingredients
- 1 12 oz pack cauliflower rice
- 2 Tbsp olive oil
- 1 cup frozen peas and carrots
- 1 can black beans
- 1/2 cup diced asparagus
- 1 small red bell pepper diced
- 1 small onion diced
- 1 tsp oregano
- 1 tsp parsley
- Salt and pepper to taste
Directions
- In a large cast iron, or a very large skillet, heat 2 tablespoons of olive oil over medium heat
- Add bell peppers and onions and cook until slightly brown
- Add oregano, parsley, peas and carrots, and asparagus
- Once vegetables are cook add the beans followed by the cauliflower rice
- Season with salt pepper to taste
- Remove from heat and let stand, covered for 10 minutes
