Today I would like to share with you my healthy version of blueberry pancakes that you will surely love. I made these this morning and boy oh boy even the kids didn’t notice the difference.
Yummy Spelt Blueberry Pancakes
Ingredients
- 4 eggs *organic if possible*
 - 2 cups of coconut milk
 - 2 cups of sprouted spelt flour
 - 2 tablespoons of baking soda
 - 1 pint of fresh blueberries *organic if possible*
 
Directions
- Beat eggs with a fork in a large bowl
 - Add milk and stir
 - Stir flour into mixture slowly
 - Mix in the baking soda
 - Stir blueberries softly into the batter
 - Place a small amount of organic butter in the bottom of a pan
 - Pour pancake batter into the pan when heated to a medium heat
 - When cooked enjoy with a light amount of maple syrup
