Buckwheat is one of the healthiest foods that has been consumed in Asian countries for centuries.
Buckwheat is not a grain as you might think, it’s a fruit seed that is related to rhubarb and sorrel.

Cocoa Buckwheat pancakes
Ingredients
- 1 Cup buckwheat flour
- 1 Egg (organic)
- 3/4 Cup almond milk (organic)
- 1 Tsp olive oil
- 1 Tsp of cocoa
- 1/2 Tsp cinnamon
Instructions
- In a bowl mix first buckwheat flour, cocoa, cinnamon, and then add egg, milk, olive oil and vanilla, and whisk until batter is thick and smooth
- Preheat your skilled over low heat, and brush with 1/2 tsp butter
- Drop batter using a large spoon, and cook for 3 minutes each side
- Serve it with your favourite fruit!
Optional
- 1/4 Cup of any kind of fresh berries or jam (no sugar added)
- Sliced banana or apple
- 1 Tsp 100% maple syrup
