These are delicious, nutritious, and a great little snack that will keep you going between meals.
This is my personal favorite eggplant pizza topping but you can add anything else to it that you would normally put on a pizza.
Experiment and find the combo that works for you. Or maybe you will love this one as much as me! 🙂
- 1 Eggplant
- Cheese (or non-dairy alternative)
- Onion powder
- Garlic Powder
Slice the eggplant into 1 inch thick rounds. Grill for around 3 minutes each side, and place on a baking pan. Top with tomato sauce, fresh basil, garlic powder, onion powder, thinly sliced tomato, and top with feta and a sprinkle of cheese (or dairy alternative ‘cheese’).
Bake on 350 for 10 minutes, then broil for 1-2 minutes to melt the cheese.
