Poppy Seed Lemon Bread
There is something special about a good old poppy seed lemon bread. It has such a delicate taste, doesn’t it? And to make it even better, poppy seeds have amazing health benefits, such as they help to improve digestive health, they are a good source of dietary fibre, minerals, b vitamins, to name just a few. This bread is a healthy gluten free treat. Give it a try, you will not regret it.
Dry ingredients
- 1 cup almond flour
- 11/2 cup buckwheat flour
- 2 tsp baking powder
- ¼ tsp baking soda
- Pinch of salt
- 3 tbsp poppy seeds
- 2 tbsp hemp hearts
Mix all dry ingredients in a bowl. Set aside.
Wet Ingredients
- 1 cup and 2 tbsp of hemp milk (or almond milk)
- ¼ cup avocado oil
- 2 eggs
- 4 tbsp lemon juice
- ½ cup maple syrup
- 1 tsp vanilla
Directions
- Mix all wet ingredients in a bowl or measuring cup and add to the dry ingredients
- Gently mix until combined
- Pour the mix into a bread pan
- Set your oven at 350F and bake the bread for 45 minutes or until a toothpick can be inserted in the middle of the bread and come out clean
- Then remove the pan and place it on a rack
- Brush the topping on top and along the sides of the cake while the bread is still warm and the let it cool
Enjoy!
This bread can be frozen if needed.
Topping
- 2 tbsp lemon juice
- 4 tbsp maple syrup
