This easy veggie filled soup is perfect for cold winter nights. Broccoli cheese soup is a favourite of mine at restaurants so I have been working on my own recipe that I can make at home and control the ingredients.
Broccoli Cheese Soup
Ingredients
- 4 cups Broccoli cut into bite sized pieces
- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons of flour
- 3 cups Chicken/Veggie Broth
- 2 cups Milk
- 2 cups Cheese, I usually use Cheddar or Marble
Directions
- Steam broccoli
- Meanwhile in large pot sautée onion and garlic till soft
- Add flour and blend well, cook 1-2 min stirring constantly
- Add broth and milk, whisking until smooth
- Simmer 5-10 min
- Add cheese and whisk in until smooth
- Add broccoli and simmer 5-10 min

This is a fairly basic recipe, that can easily be added to or adjusted. When I made this tonight I added celery and carrot with the onions, and added a bit of cauliflower with the broccoli. I find that 2% milk is a good compromise between fat content and a creamy taste. Feel free to use skim milk or cream depending on your preference. I have not tried this with non-dairy milk/cheese so I am not sure how it would turn out.
