This is a Veggie filled barbecue side dish the whole family will love! It’s quick and easy to prepare so that you can spend more time enjoying the great outdoors with friends and family this summer. This recipe serves 4 people.
BBQ Veggie Side Dish
Ingredients
- 8 asparagus spears
- 4 large carrots
- 4 portobello mushrooms
- 1 red onion
- 1 lemon
- olive oil
- 2 cloves garlic
- salt & pepper
Instructions
- Preheat grill on medium-low.
- Slice mushrooms into thin strips and cut carrots lengthwise until they are one-half to one cm in width. Chop a peeled onion into quarters and cut asparagus in half.
- Place all Vegetables in a nonstick grill basket for seasoning. Drizzle vegetables with Olive Oil and add 2 cloves of crushed garlic. Mix all ingredients well.
- Place grill basket on the barbecue and stir ingredients with a wooden spatula every few minutes. Remove from heat when all vegetables are cooked.
- Add freshly squeezed lemon juice before serving and salt and pepper to taste.
