Lentil And Brown Rice Casserole
Ingredients
- 1/2 cup white wine
- 1 1/2 cups chicken or veg stock, low sodium
- 1/2 cup dry green lentils
- 1/2 cup brown rice
- 1 cup crushed tomatoes, low sodium
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1/4 tsp thyme, basil, and one bay leaf
- Pinch of pepper
- 1/2 cup Swiss cheese, grated
Method
- Add all ingredients into casserole dish, except for cheese
- Bake, covered, at 350F for 1 1/2 hrs
- Remove lid and add cheese; return to oven for 5 more minutes
- Serve
