Delicious Low Carb Tuna Cakes!

A high protein Low carb snack or meal that can be made ahead of time and skillet fried or baked when needed.

When I am home with my baby I don’t want to spend much of my precious free time cooking, but I do need something to eat to fuel my body. I can make these ahead of time and only need to pan fry them for a few minutes when I want a snack or light lunch.

Ingredients

  • 2 cans Tuna
  • ¼  cup Greek yogurt
  • 2 Tbsp Lemon juice
  • 1 Tbsp Dried Dill

Instructions

Mix thoroughly and form into patties. Place covered in the fridge for at least an hour – this will help them keep their shape when you cook them.

I like to pan fry them in a little avocado or olive oil. Just a few minutes each side to warm them and get a nice crust. You could also bake them in the oven, especially if you are making a larger quantity!
