Pan Fried Sole

I have been trying to add more fish into our diet. This is sometimes difficult as my husband is not a big seafood eater. So I have been looking for recipes that are not too fishy and are quick and easy to prepare. This pan fried sole fits the bill and is very tasty. You could spice it up by adding more spices in the flour or even using a gluten or grain free flour.

Pan Fried Sole

Ingredients 

  • 1 Pound Fresh or frozen and thawed Sole Fillets- If using frozen you want to make sure that they are fully thawed so that they cook quickly. You will also want thin fillets so they will cook before burning.
  • Sprinkle 1 Tbs Lemon juice onto fish.
  • Season ¼ cup Flour with Salt and Pepper.
  • Preheat a flat griddle with oil of your choice- butter, coconut oil.

Directions

  • Dredge Fish in the flour mixture and place on hot griddle.
  • Cook for 4-5 min each side.

I like to pair this with a large salad for a quick delicious supper.
