Vegetarian and Plant-Based Nutrition

As a Massage Therapist, environmentalist, vegan, and runner Rachel has a strong love for natural, healthy eating. It has been a long journey to develop a healthy relationship with food.

As a young girl she had struggled with her weight. Entering puberty being overweight was very damaging to her self-esteem. To combat that she turned to crash dieting. There were periods of anorexia were she dropped a lot of weight and moved to the underweight category, and then areas of binge eating with pizza, cakes, burgers, fries, and candy.

Turning 25 and going back to school, she decided it was time to make a change. She cut out meat and started to add vegetables back into her diet. Slowly she started dropping fast food and sugary treats out of her diet. Now she has a strong vegan diet filled with whole grains, fruits, vegetables, and legumes. Eating foods from the earth has revamped her energy and has probably added years to her life. Moving forward she wants to help others develop a passion for healthy eating.
