As far as wheat free muffins and baked goods go, we have a tough audience over here. Many recipes (especially muffins) sadly get chucked due to being overly dry or ‘puck’-like.
These wheat free DELICIOUS banana chocolate chip muffins are so moist and soft – it is hard to eat just one! Gluten free, made with coconut flour, full of protein, and no added sugar (bananas and apple sauce gives it all the sweetness it needs) it is a guilt free snack. 🙂
Ingredients:
- 3/4 cup coconut flour
- 1/4 cup oats
- 3 Large Eggs
- 1/2 cup egg whites
- 1/4 cup melted coconut oil
- 1/3 cup apple sauce
- 3/4 cup mashed banana
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla bean powder (or vanilla extract)
- 1/4 cup water
- 1/2 cup dark chocolate chips
Instructions:
Mix all wet ingredients together in one bowl, and do the same with the dry ingredients. Add the flour mixture to the wet ingredients mixing well to get out any lumps. I use a hand held mixer. Add in chocolate chips, and mix with a spoon until evenly distributed.
Line a pan with muffin liners (highly recommended to avoid sticking), and fill muffin cups to the top, level with the pan.
Cook for 18-20 minutes at 375.
