If I were asked if there is a staple food in my kitchen it would have to be this delicious and healthy banana bread granola. It is packed full of easily digested plant-based protein and healthy fats both of which make it a very satisfying treat. My husband is a huge fan and he eats it with some almond milk as a cereal, my two kiddos love it on its own with some extra raisins on top and I love it mixed with some unsweetened coconut yogurt and cacao nibs. However you choose to enjoy it I’m sure you will love it. An added bonus is it makes your kitchen smell amazing while it bakes!
Yummy Banana Bread Granola
Makes about 8 cups
Ingredients
- 3 cups gluten-free oats
- 3 tbsp coconut oil, melted
- ½ large ripe banana, mashed
- ¼ cup real maple syrup
- 1 tsp pure vanilla extract
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 cup raw pumpkin seeds
- 1 cup pecans, chopped
- 1 cup walnuts, chopped
- 1 cup unsweetened shredded coconut
- 1 cup raisins or dried cranberries
- ½ tsp sea salt
Directions
- Preheat oven to 300℉. Line a baking sheet with parchment paper
- Place oats, seeds, nuts and coconut into a large mixing bowl, stir to combine
- In a small bowl mix together melted coconut oil, mashed banana, maple syrup, vanilla extract, cinnamon, nutmeg and sea salt; whisk together very well
- Pour liquid mixture over the dry ingredients
- Stir it all together very well to be sure everything gets coated in yumminess
- Spread the granola evenly onto the baking sheet and bake for 1 hour, stirring the mixture every 20 minutes for a total of 3 times
- After 40 minutes, add in the raisins or dried cranberries and continue baking for the final 20 minutes
- Remove the granola from the oven, let it cool and then transfer it to a glass container, I use mason jars
