This easy baked egg dish makes an economical nutritious breakfast, lunch or dinner. It is a good recipe to use up leftover veggies, so feel free to substitute for what you have on hand.
Yummy Veggie and Cheese Frittata
Preheat oven to 400 F
Recipe
In large skillet on medium heat, saute 3-5 min.
- 1 Tbsp Oil
- ½ cup chopped onion
- ½ cup sliced mushroom
Meanwhile in large bowl whisk together
- 4 large eggs
- ¼ cup Cream
- Salt and Pepper
- 1 tsp Worcestershire
Instructions
- Add 2 cups Spinach or other greens to the skillet and saute 1-2 min.
- Sprinkle 1 cup shredded cheese on top of veggies.
- Pour egg mixture evenly over the cheese.
- Turn off stove top and place skillet in warm oven.
- Turn the oven to broil and cook for 4-5 minutes.
- While the frittata cooks dice 2 Roma Tomatoes.
Take frittata out of oven, cut into 4 slices. Place each slice on a plate and top with diced tomato.
